Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • Cooking spray or olive oil for greasing

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
  2. In a shallow dish, combine the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix well to combine.
  3. Dip each piece of chicken into the beaten eggs, then coat it in the almond flour mixture, pressing gently to adhere.
  4. Place the coated chicken pieces on the prepared baking sheet in a single layer, making sure they are not touching each other.
  5. Bake in the preheated oven for 12-15 minutes, or until the chicken is cooked through and the coating is crispy and golden brown.
  6. Remove from the oven and let the chicken nuggets cool for a few minutes before serving.
